Coconut Green Curry Soup

This is a recipe for green curry paste, and then transformed into a quick and easy bowl of soup with rice noodles and chicken thighs.

Ingredients:

Curry paste

  • 1 stalk of lemongrass chopped
  • 2 cloves of garlic
  • juice and zest of 2 limes
  • 1 shallot chopped
  • 1 tbsp grated ginger
  • 2 tbsp fish sauce
  • 1 cup cilantro
  • 3 jalapenos, seeds removed from 2
  • 1 tsp coriander
  • 1 tsp cumin
  • 2 tbsp olive oil
  • salt and pepper to taste

Blend all these ingredients in a food processor or blender.

For soup

  • 2 cans coconut milk
  • 1 liter chicken broth
  • 1 pkg rice noodles, soaked and softened
  • 6 chicken thighs, cooked and sliced

Add the green curry paste to large pot and cook on medium heat for 3 minutes. The add the chicken broth and coconut milk. Let simmer for 20 minutes. Add noodles to each bowl and top with sliced chicken and cilantro.

Greek pasta salad.

Ingredients:

  • 1 cup cherry tomatoes
  • 1/2 cucumber, quartered and sliced
  • 1 pepper, sliced
  • 1 cup kalamata olives, pitted
  • 1/2 cup crumbled feta
  • juice of 1/2 a lemon
  • 1 tbsp red wine vinegar
  • 1/4 cup olive oil
  • 1 tbsp dried oregano leaves
  • 1 clove garlic, minced
  • 1 package of rotini pasta
  • salt and pepper to taste

Directions:

    • Bring pot of salted water to boil and cook pasta as directed on the box.
    • Once pasta is cooked, strain and chill under cold running water.
    • In a large bowl combine pasta, veggies and feta.
    • In a small bowl whisk lemon juice, vinegar, oil, garlic, oregano, salt and pepper.

Toss salad in dressing.

POTSIE LIVING | Homemade electrolyte drink

Every once and a while I make a POTS post, and because life with postural orthostatic tachycardia syndrome requires us to consume plenty of water and lots of salt each day, I have decided to make my own “Gatorade”. Consuming extra salt and water will boost blood volume and hopefully help the heart work a little less hard pumping blood throughout the body. All these sports drinks have so much sugar and aspartame, and some just taste bad; this is my remedy for sugary, disgusting electrolyte products. I decided to use pomegranate juice because pomegranates actually have quite a bit of potassium in them and because they are delicious.. of course. I also decided to use honey as the sweetener. This is my Pomegranate Citrus “Gatorade” recipe!!

Ingredients:

  • 2 cups pomegranate juice
  • juice of 2 oranges
  • juice of 2 lemons
  • 1 tsp of sea salt
  • 3 tbsp honey
  • Water to dilute
    • I added about 4 cups of water to this mixture which made about 2 liters, but add as much or little water as you please.

Chill for a couple of hours and its ready to drink!
