Roasted Potato Salad

I haven’t been able to make a post in while and I didn’t have much in the pantry, so I have decided on a simple recipe. Thankfully, I always have potatoes stocked. This potato salad recipe is super simple and contains most ingredients I would think are usually stocked in the fridge or pantry. This is a yummy snack and works perfectly as a simple side dish.


  • 1 bag baby red potatoes
  • 1/4 cup chopped bacon
  • 1/2 cup chopped parsley
  • 1/4 cup sour cream
  • 1/4 cup mayo
  • 1 tsp white wine vinegar
  • 1 tbsp dijon mustard
  • 1 clove minced garlic
  • 2 tbsp olive oil
  • salt and pepper



  • Preheat oven to 350 degrees
  • Cut potatoes in half
  • Toss potatoes in olive oil and season with salt and pepper
  • Cook in oven until golden brown and tender, approximately 30 minutes
  • Fry bacon until crisp and then chop
  • Combine bacon, garlic, parsley, mayo, sour cream, mustard and vinegar in mixing bowl
  • Season dressing with salt and pepper to taste
  • Once potatoes are done, toss with dressing and serve
