This weekend I picked up some beautiful tomatoes from my local farmers market, and this is just one of the yummy dishes that came out of my kitchen. Open faced tomato, egg and feta sandwich. Creamy egg yolk, fresh tomatoes and salty feta, perfectly simple and delicious.
1 egg, poached
1 tomato, sliced
1 slice toasted bread
1 tsp butter
1 tbsp crumbled feta
Bring pot of water to a simmer, add pinch of salt
Stir water to create a little whirl pool and carefully add cracked egg
cook egg for about 4 minutes(soft poach)
Toast your favorite bread and spread with butter
Add sliced tomato on to buttered bread
Top with poached egg and feta cheese
I added sweet cherry heirloom tomatoes on top because they were available at the farmers market, but it will still taste yummy without if you don’t have any on hand.
