Salami Sandwich | Kale Pesto Recipe

I had a sandwich last week at Mrkt that was similar to the one I’ve made for the blog. It was so delicious I had to try and make my own version.

And Voila! Salami Sandwich with Kale Pesto, Mushrooms and Onions



Kale Pesto

  • 1 bunch kale (approximately 2 cups)
  • 1 cup basil
  • 2 gloves garlic
  • juice of 2 lemons
  • 1/4 toasted pine nuts
  • 1/2 cup olive oil

Blend until smooth. This freezes well, so if you don’t use the whole batch it will keep for a couple weeks in the freezer for a later use.

Kale Pesto Mayonnaise

  • 2 tbsp pesto
  • 1/4 cup mayo

For sandwich

  • 1 lb slice white mushrooms
  • 2 thinly sliced onions
  • 2 cloves garlic
  • salt and pepper to taste
  • salami ( 4 slices per sandwich) – I used peppered salami
  • provolone cheese (2 slices per sandwich)
  • bread- I used sourdough but any bread of your liking will do


First, cook and caramelize mushrooms, onions, garlic on medium heat until tender and have golden color. Add salt and pepper to taste.

Turn oven on to broil

Take two slices of bread, add pesto mayonnaise to both sides of bread. Add mushrooms and onions to one side of bread and the top with salami. On the other slice of bread you will place cheese.

On a baking sheet broil both sides of the sandwich until cheese is gooey and golden. Remove fro oven carefully assemble sandwich and eat!

Egg salad with a twist…

This recipe is a combination of the classic BLT, egg salad and my grandmas homemade dill dressing. I have smashed hard boiled eggs tossed them in my grandmas dressing, and topped with all the fixings of a BLT.



  • 6 hard boiled eggs
  • 1/4 cup mayo
  • 1 tbsp dill pickle brine (Claussen pickles preferably)
  • 1 avocado, smashed
  • 2 vine ripened tomatoes
  • Alfalfa sprouts
  • crispy bacon strips
  • tbsp chopped dill
  • salt and pepper to taste
  • toasted bread



  • Smash hard boiled eggs with a fork
  • Whisk mayo, brine, salt, pepper, and dill together
  • Combine eggs and dressing
  • Add smashed avocado to toasted bread, spread evenly on both slices of bread
  • Add egg salad, bacon, tomatoes, and sprouts.
  • Top with last slice of bread

…a little messy but the best foods are the messiest!
